The talented Aussie-Fijian chef was named the 2014 Josephine Pignolet Young Chef of the Year by the Sydney Morning Herald after working in the Sydney restaurant scene. (In case you’re wondering, E.P. & L.P. stands for for the musical terms "extended play and long play"!)
Louis has made close lifelong friends throughout his career working in kitchens around the world and he loves the camaraderie and family mentality that exists in hospitality. This is what made him fall in love with the hospitality industry.
