John Lawson is a Westminster trained chef who started his career at Le Manoir aux Quat'Saisons. He is the owner of FOOD by John Lawson, a restaurant in Essex with a focus on sourcing local, organic produce to create dishes that promote gut and brain health and wellbeing.

After training with Raymond Blanc, John went on to work at two and three-Michelin starred restaurants across the world. He has worked alongside Gordon Ramsay and Gary Jones and was the executive chef and partner of No.8 at Crown Melbourne. He was a private chef for the Sultan of Oman and has made numerous TV appearances.

In 2015, when he experienced a seizure that saw him rushed to a hospital, doctors found and successfully removed a tumor from John’s brain. Following his recovery, John returned to the UK and opened FOOD shortly after, inspired by his own journey back to health.

Now, John focuses on creating and sharing wholesome dishes that nourish the body without sacrificing on flavor!
